Countdowns
I cant believe it, I only left 4 months to go in UK and as a working holiday visa holder. Going back to my normal life soon on July 2010.
My feeling now is 50% happy and another 50% sad, anyhow still need to face it. Feel lke used to stay here in London

Chocolate Muffins
You will need : Extra Equipment: a muffin baking tray
Ingredients:
50 g (2 oz ) butter - softened
75 g ( 3 oz ) brown sugar
1 egg
100 g (4 oz ) plain flour
2 teaspoons baking powder
1 tablespoon cocoa powder
90 ml ( 3 fl.oz ) milk
75 g ( 3 oz ) chocolate chips
Preheat the oven to 260 C / 500 F / gas mark 10
Top Tip : To soften the butter, take it out of the fridge at least 30 minutes before cooking.
1. Use a paper towel to grease the baking tray with a little soft butter.
2. Put the butter, sugar, egg and flour into a large mixing bowl. Stir them all together with a wooden spoon until they are well mixed.
3. Sift the baking powder and cocoa into the bowl.
4. Ad the milk and chocolate chips. Mix together.
5. Use a teaspoon to divide the mixture equally into the muffin tray. Bake the muffins for about 12 minutes.
6. Leave the muffins in the tray until they are cool, and then turn out and ENJOY.
